The ritual

How it goes

  1. 01

    Smell the grounds

    Every coffee gets ground fresh into its own cup. First pass is dry, so you just lean in and smell what the roast is giving off.

  2. 02

    Break the crust

    Hot water goes on and the grounds float into a cap. A few minutes later you push through it with a spoon and get the biggest hit of aroma of the whole session.

  3. 03

    Slurp loudly

    Once it cools, you slurp off a spoon so the coffee sprays across your palate. It feels ridiculous. It also works, and that is the whole trick.

  4. 04

    Compare and argue

    Same water, same grind, same time. The only variable is the coffee, so the differences between origins get very obvious, very fast.
